I have used both Fire and Adium and found Fire to be superior.

Back when I was trying them out, only Fire had IRC support. The one edge that Adium has is that you can have multiple simultaneous windows within the same service (ie. two Y!chat windows) I'm not one for multiple screen names, though, so this didn't matter for me. Also, this was a long time ago (~1 yr), and perhaps things have changed with both clients.

Both clients seemed quite stable, both are good looking, but Fire's better looking!

I used Fire for over a year before switching to Adium. It's a solid client and served me well. But the super-configurable, glossy, eye-candyness of Adium sucked me away from Fire. I never used IRC so that wasn't an issue. Personal preference for me is definitely Adium. But solid props to the Fire team for paving the way with a good client.
